Recipes

My Ideal Sunday morning is in the kitchen. For some this might feel like a torture, but I love cooking, and if I may say, I’m quite good at it. I’ve shared my ultimate Quick and Easy Tips for a vegan diet, but I also wanted to share the products I can’t live without, and the sources (websites, books, magazines) from where I get my favourite recipes. Scroll to find out!

I would love to hear about any products or home-cooked meals you recommend, please leave a comment at the end of this page!

Veganuary Recipes

Anytime anyone asks me for vegan recipes I send them a link to the Veganuary site.  They have hundreds of recipes, beautifully categorised for easy convenience. You can also search based on ingredients which is super helpful when you want to make the most of your cupboard collections!

Veganuary are also great at reminding you what being a vegan means.  When I first signed up, I thought I would only do it for the month of January.  They sent me weekly emails that were both motivating and educational, quickly, I realised I wanted to eat plant based forever.

They also help you answer those tricky questions like “Why don’t vegans eat honey?”. So if you haven’t already, sign up!

These are the recipes from the Veganuary site that I’ve liked the most:

Mindful Chef

I thought I would never buy a ‘Recipe Box’.  That is until I was planning a weekend away and worried about arriving home really late on the Sunday and not having anything in the fridge to prepare.  A couple of friends raved about Mindful Chef, so I thought this would be a great opportunity to try it out.  I am happy I did.

Now, I am not a regular customer, but I do like to order a few boxes every few months.  Their recipes have allowed me to branch out and try new vegetables I would usually shy away from –Hello Fennel!-.  I cook them over and over again.

Aside from healthy recipes, Mindful Chef donate a school meal to a child living in poverty for every meal they sell and if that wasn’t good enough, they are environmentally conscious with their packaging and food sourcing.

Here are a few of my favourite recipes:

Print is very much alive!

I never knew I needed The Vegan Bible until I got it as a Birthday gift TWO YEARS after I started this journey and I can’t believe I hadn’t thought of it myself.  Easily the best gift ever! There are so many great recipes, I can’t really bullet them out.  All I will say is, get this book. You will be grateful.

I also love looking through magazines on my evening commute and marking all the pages with recipes I’m interested in.  There are a few different periodicals out there which focus on Vegan products and food… Here are a few of my favourites:

  • Vegan Life
  • Vegan Living
  • Vegan Food & Living

It’s hard to miss them with their very obvious names! But seriously, I’ve found they all have delicious and numerous recipes, they’re a great source for inspiration.

From around the ‘Net

I’ve tried so many lovely recipes that I have found online either in independent blogs or cooking sites.  These stand out for me:

  • Sweet Potato Gnocchi – Perfect for a summer meal Al Fresco! I pan fry the blanched gnocchi in butter with garlic, oregano, salt and pepper and throw in a few cherry tomatoes.  It is heavenly!
  • Chocolate Cake – I’m a chocoholic and choosing not to eat dairy in no way means I’m compromising.  This recipe is absolutely divine
  • S’mores cookies – I’ve made them twice (over the same weekend).  The first time I used coconut flour and although they tasted amazing they were a tad bit dry.  So, I tried again (after eating the first batch) and I used plain flour, they came out perfect.  I could eat these every day! It’s worth noting I didn’t add cornstarch either time as I never seem to have any in my pantry and it didn’t seem to be a problem
  • Vegan Cinnamon Rolls – I didn’t realise how much liked them until 2020 Lockdown when the constant Instagram posts made me crave Cinnamon Rolls, I did a quick online search and found the Minimalist Baker. They are gooey deliciousness
